3 tablespoons (45 g) butter, at room temperature
3/4 cup (90 g) grated Cheddar cheese
1/4 cup (38 g) feta cheese
1/2 cup (63 g) whole-wheat pastry flour
1/4 teaspoon salt
4 dashes hot sauce, or more to taste
12 whole roasted unsalted almonds
Preheat the oven to 425°F (220°C, or gas mark 7).
Combine the butter, cheeses, flour, salt, and hot sauce in a food processor and process just until the mixture forms a dough (it will begin to hold together), less than 1 minute. Pinch off 12 sections of the dough and wrap each around 1 almond to form twelve 1 1/4-inch (3.2-cm) balls. Arrange on a baking sheet and cook for 8 to 9 minutes, or until lightly browned.
